Is quartz really maintenance-free?

Near enough. It never needs sealing and resists stains, but it isn't heat-proof — always use a trivet under a hot pan.

Will marble stain right away?

It etches (dulls) rather than stains from acids like lemon and wine. A honed finish hides etching far better than a polished one.
